Gluten Free Week: Day 5

Most of the time I don't have the time to cook. OK - I probably have the time, but getting off the couch after working three 12 hour shifts in a row, getting called in for a fourth shift, and then running 12 miles because I'm insane doesn't leave me with enough energy to use a can opener to throw some beans and chicken into the crockpot. Because that's a gourmet dinner around here, folks. So here are our favorite quickie, fallback, regular, we-eat-these-all-the-time and-we-are-so -sick-of-them dinners.

Rice and Raisins

My mama used to make this for us with leftover rice. My kids adore this meal. (Can you call it a meal? Probably not.) You can eat it breakfast, luch, AND dinner. In the same day! You almost have all your food groups covered. Who needs complete protein, anyway?

*Cooked rice (Somewhere in our fridge there is almost always a tupperware with leftover rice in it. I can't vouch for the safety or age of said rice, but there you have it.)

*Milk

*Sugar and Cinnamon

*Raisins (optional)

Throw it all together. Warm it up. Eat it. If you're feeling daring, you can even add a little butter.

Beans Over Chips

*Corn chips or Food Should Taste Good Multi Grain chips.

*Beans. (Any kind. We prefer black.) Rinsed and drained.

*Cheese

*Sour Cream

*Tomato

*Avocado

*Salsa

Throw it all together. Warm it up if you're feeling particularly energetic.

Quesadillas

*We recently invested in this quesadilla maker because, frankly, we eat them daily, and making a cheese quesadilla takes about 30 seconds less if you have one of these. Well worth thirty bucks. All you need are corn tortillas and cheese. (And ketchup, if you're Jackson.)
